I'M A BIG FAN OF WINE. RED WINE IN PARTICULAR. BUT ONE THING THAT ALWAYS STRUGGLED WITH IS, HOW COLD DO I KEEP IT IN THE FRIDGE? IF IT'S TOO COLD, THE FLAVOURS WILL BE LOST. TOO HOT AND, WELL, YUCK. BUT FINDING THE RIGHT BALANCE CAN SOMETIMES BE A MISSION.
THAT SWEET SPOT SEEMS TO BE AROUND 14 DEGREES CELSIUS. THAT'S WHAT I START MY RED WINE OUT AT IN MY FRIDGE. IT'S CALLED 'CELLAR TEMPERATURE' BECAUSE IT'S WHAT YOU WOULD FIND IN AN UNDERGROUND...WELL...CELLAR. IT PROVIDES THE PERFECT ENVIRONMENT TO SHOWCASE THAT DELICIOUS RED WINE.
AN IMPORTANT POINT I'VE LEARNED IS TO AVOID MOVING THE WINE TOO OFTEN. IF I DO THAT, THE CHANGE IN TEMPERATURE COULD AFFECT THE WAY THE WINE TASTES IN A NEGATIVE WAY. IN ADDITION, TRY TO KEEP YOUR BOTTLES AWAY FROM LIGHT, AS THIS CAN ALSO AFFECT THE FLAVOURS.
EVEN THOUGH IT TAKES A LITTLE MORE TIME TO FIND THE PERFECT TEMPERATURE FOR YOUR RED WINE IN THE FRIDGE, IT IS CERTAINLY WORTH IT. THAT'S WHY I USUALLY MAKE SURE I TASTE TEST NEW WINES AT 14 DEGREES CELSIUS. SO, THE NEXT TIME YOU'RE GRABBING A BOTTLE OF RED FROM THE FRIDGE, REMEMBER, 14 DEGREES IS THE SWEET SPOT!

The “sweet spot” of Red Wine Temperature in a Fridge
Getting the perfect red wine temperature straight out of a fridge can be tricky — too warm or too cold, and you’ll miss out on the nuances of your vino! To ensure your tipple remains at its optimum level, here’s all you need to know about getting it right.
Firstly, when you buy bottles and place them in the fridge, it’s important to understand the very core of whether you like your red wines cold or not. Some prefer to drink their red wine ice cold while some rarities are best enjoyed at “room temperature”. In most instances, the sweet spot of a great red wine temperature should arguably be between 58–64℉ (that’s 14-18℃).
Getting to the Sweet Spot
Red wines will chill quicker than white wines, as reds generally require much less chilling. To reach the sweet spot, it’s best to take red wines out of the fridge about 15–25 minutes before serving.
Fridge temperatures can often be much cooler than the suggested temperatures, so moving the bottle to a warmer room or using a wine sleeve can help it to reach the desired level for consumption.
Best Whites for Cooler Temperatures
While red wines benefit from slightly warmer temperatures, whites are ideal when cooled down to a lower level. Generally, cooler temperatures should be between 48–57℉ (that’s 8-14℃). The cooler temperatures highlight the tongue-tingling acidity and brighter fruit flavors, while an above-average temperature can make a white wine taste more watery and dull.
If you find that whites being served in your fridge are too cold, then it’s best to take them out of the fridge 15–20 minutes beforehand.

Fundamentally speaking, if the temperature is TOO HIGH the nose and flavor of the wine can diminish. On the other hand, if it is TOO LOW, then the wine won't be able to reach its fullest potential. With all this in mind, let's now dive into the sweet spot.
Ahhh that sweet spot! The temperature range for red wine storage is between 10°C and 18°C (50°F to 64°F). Any temperature significantly higher or lower than this WILL compromise the wine’s quality, BUT this doesn’t mean you have to keep your fridge at an exact temperature at all times! To enjoy the optimal flavor and aroma of red wine, maintain it in a range between 12°C and 16°C (55°F and 61°F). And make sure the temperature is not fluctuating too much during the day.
